The pot is wired as a voltage divider, so changing the value will not have that much effect. However, changing the taper from linear to log or vise versa will. You can also get reverse log, if you want that. The quality of the pot also has a big impact on smoothness of current transition. So be sure to get a good one. To get the most resolution set the panel at the expected max current or just above, that way you have the most response from the pedal, as well.
